History

Quincys Steak & Spirits is a locally owned and operated corporation situated in four scenic locations in the Upper Arkansas River Valley in the heart of Colorful Colorado.

The conception of Quincys sprang from a family restaurant tradition that evolved around a simplistic menu with an exceptional value. My family’s tradition in the food business reaches back to my grandfather selling hamburgers for a nickel in the 1920s. My father was in the fast food business and actually initiated our “one item menu” concept in 1979 with the opening of his successful and still current restaurant, Prime Time Tavern located in Huron, South Dakota.

Quincys flagship establishment was first opened in October of 1997 in the heart of Historic Leadville, Colorado. This location was the inspiration for the naming of the restaurants as it was housed and is still located today in the downtown historical “Quincy” block which was originally built in 1879.

We opened a second Quincys location in downtown Buena Vista in early 2003, later relocating to the current Hwy 24 venue in 2010. Buena Vista’s restaurant boasts a charming dining facility in the heart of rafting country.

In 2008 we opened the third Quincys establishment in Salida. Elegant interior includes intimate booth space or a large dining room that lends this location for business meetings, family gatherings or a relaxed date night.

As of April 2015, we are celebrating the opening of our 4th location located in the old town district of Florence. With many antique shops and close proximity to the Royal Gorge, this location is a perfect destination for a weekend or day trip.

In November of 2016 we were proud to announce the opening of our fifth location in Monte Vista in the San Luis Valley!

Five locations, for an exceptional dining value, each within their own unique Colorado community that offers diverse amenities to tourists and locals alike.
